Non-Dairy Ice Cream (Almond & Coconut Milk)
If you don't have an ice cream machine you can eat the custard as a pudding.
Ingredients
- 2 cups Almond Milk
- 1 cup Coconut Milk
- 4 Egg Yolks
- 1/2 tsp Xanthum Gum
- 1/4 tsp Salt
- 2/3 cup Xylitol (or your sweetener of choice)
- 1/2 tsp Vanilla Extract (or your extract of choice)
Instructions
- Whisk all ingredients together (EXCEPT Extract) in sauce pan. Whisking often, to keep the Almond Milk from settling on the bottom.
- Bring custard to a simmer for about 3-5 minutes.
- To test for doneness: Dip a spoon into hot custard, remove spoon and run your finger over back of spoon. If the custard stays separated it is done.
- Remove custard from heat source and add extract of choice.
- Strain custard mixture.
- Chill custard in freezer for 2 hours. OR, chill in refrigerator until about 41F (6-8 hours).
- The custard will consistency will be like a pudding. At this point you may eat it as is.
- Pour the custard into your ice cream machine and follow directions. Pending how cold your machine gets, churning should not take more than 15 minutes.

Dairy = food items made from cow milk.
What is not dairy?
Eggs are not dairy. They come from chickens/birds.
Cows don’t lay eggs.
