Blueberry muffins can be enjoyed as a breakfast, brunch or as a snack.  Made with fresh or frozen blueberries, which ever you have on hand.

And, no heavy equipment required.

Ingredients

Dry Ingredients

  • 3 cups          All Purpose Flour
  • 1 1/2 cups    Sugar
  • 1 tsp             Salt
  • 4tsp              Baking Powder

Wet Ingredients

  • 2/3 cup         Avocado Oil
  • 2                   Eggs
  • 1 1/2 cups    Milk
  • 2 cups          Blueberries (frozen or fresh)

Instructions

  1. Pre Heat oven to 400F
  2. In first bowl, combine flour, sugar, salt and baking powder.
  3. In second bowl, mix together oil, eggs and milk.
  4. Put blueberries in third bowl.
  5. Toss the berries in about 2 tablespoons of the dry ingredient mix.  Making sure each berry is covered with the flour mix. This will prevent the berries from sinking to the bottom of the muffins.
  6. Add wet ingredients to dry ingredients and mix until all dry ingredients are wet. No streaks of flour.
  7. Fold in flour coated blueberries into batter.
  • Fill muffin cups to the top (about 1/3 cup).
  • Bake 20-25 minutes (fresh blueberries)
  • Bake 25-35 minutes (frozen blueberries)
  • Muffins are done when a toothpick inserted comes out clean.

Notes

Vegan Options:

  • Replace the 2 eggs with 2 flaxseed eggs
  • Use coconut or almond milk in place of cow milk.
