Ingredients

Overnight or 12-15 hours of Fermenting/Proofing

  • 1/2 cup AP Flour
  • 1/4 cup Water (cold)
  • 1/8 tsp/Pinch Instant Yeast

Part Two

  • 1 1/4 cup Water (cool)
  • 3/4 tsp Instant Yeast
  • 3 cups AP Flour
  • 1 1/2 tsp Salt

Instructions

  1. Stir together 1/2 cup Flour, 1/8 tsp Instant Yeast and 1/4 cup Cold Water.
  2. Cover and let rest for 12 - 15 hours.
  3. Add 1 1/4 cup cool water and mix.
  4. Add 3 cups of Flour, 3/4 tsp Instant Yeast and 1.5 tsp Salt and mix with dough hook.
  5. Mix 30 seconds. Scrap down sides. Mix for 3 minutes.
  6. Let dough rest 30 minutes.
  7. Turn dough out onto a floured surface and fold it onto itself in 3 parts. (left to center, right to center). Dusting off excess flour between each fold. Turn dough and repeat.
  8. Let dough rest 30 minutes.
  9. Repeat steps 7 & 8 three more times. For a total of 4 resting periods and 3 foldings.
  10. Cut the dough into two pieces. Put working dough back into bowl for final rise. The second dough can be placed in a second bowl or a freezer bag and frozen for later. Let dough rest for 30 minutes before shaping.
  11. Preheat oven to 450F or 500F. You may want to place a pizza stone in oven during the preheating, if you have one.
  12. Place dough on lightly flour work surface.
  13. Start to stretch dough with well floured hands.
  14. Place dough on parchment lined pan and finish forming to desired shape.
  15. Dough is very thin. Pinch hole back together.
  16. Spread sauce over surface.
  17. Sprinkle cheese and toppings over sauce.
  18. Bake for 8 - 15 minutes.
