Macaroni & Cheese

Macaroni and cheese is a classic comfort food made by combining cooked macaroni with a creamy cheese sauce.  Then baked until golden and bubbly.

I realize that some people don’t like their cheese to touch their macaroni.  That’s ok, more for me.  I am yet praying for you.

Ingredients

  • 16 oz Macaroni, Elbow Pasta
  • 2 tbsps All Purpose Flour
  • 4 tbsp Butter, Unsalted
  • 3 cups Milk
  • 1 tsp Garlic Powder
  • 1 tsp Cajun Seasoning
  • 1 tsp Paprika
  • 1 tsp Mustard (powdered or liquid)
  • 1 tsp Black Pepper
  • 1 tbsp Salt
  • 1/2 tsp Red Pepper Flakes (optional)
  • 3 cups Cheese, shredded
  • 1/2-1 cup Cheese, shredded for topping

Instructions

  1. In a large sauce pan or small stock pot bring water to boil and cook pasta according to package directions.  Drain and put back into pot cooked in.
  2. In a medium sauce pan melt butter.  Add flour to melted butter, and whisk continuously for 3-5 minutes on medium heat.  This is called a Blond Roux.
  3. Whisk in all spices.
  4. Whisk in milk on medium heat for about 5-7 minutes.  The mix will start to thicken.  
  5. Turn off heat and whisk in shredded cheese until melted.
  6. Stir cheese sauce into cooked macaroni.  
  7. At this point you are finished.  Time to plate up.
  8. But if you preferred baked Mac & Cheese:
  9. Pour pasta & cheese into a buttered oven proof casserole dish(es).
  10. Sprinkle 1/2 cup shredded cheese on top of Mac & Cheese.
  11. Bake at 350F, 20-30 minutes.  Or until it is bubbly and brown enough for you.
