Chocolate Chocolate Cake

Everything goes into one bowl.

The hardest part is melting the chocolate.

This recipe has two types of chocolate

I used Dutch Processed Cocoa.

For a lighter color and flavor use regular cocoa.

Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour

Ingredients

  • 2 1/2 cups AP Flour
  • 1 1/4 cups Sugar
  • 3/4 cup Brown Sugar
  • 2 1/4 tsp Baking Soda
  • 1 cup Cocoa
  • 1 1/2 tsp Salt
  • 2 1/4 cup Buttermilk
  • 2 Eggs
  • 2 sticks Butter
  • 2 tsp Vanilla Extract
  • 4 oz Bittersweet Chocolate Bar

Instructions

    1. Melt chocolate.  Chocolate should be cooled down a little before adding to cake batter.  If hot it will cook the eggs prematurely.
    2. Heat oven to 350°F (175°C). Butter and parchment line two 9x2-inch baking pans.
    3. In a stand mixer with paddle attachment, put all ingredients into a mixing bowl.
    4. Gently stir ingredients with spatula, until flour and cocoa are just combined.
    5. Using paddle attachment mix for about 3 minutes on HIGH speed, scraping the bowl after 2 minutes.
    6. Evenly place batter into cake pans and level batter with spatula.
    7. Bake for 35 to 45 minutes or until a toothpick inserted comes out clean.

    Notes

    Melting Chocolate

    1. Chop chocolate into small pieces and put into microwave safe bowl.
    2. Microwave at 30 second intervals, stirring after each 30 seconds.
    3. Let chocolate cool down before adding to cake batter

    Freezing

    After cakes have cooled, place in gallon sized plastic freezer bag and store 6 - 12 months in freezer.
