Lemon curd is a sweet and tangy spread that can be used on toast, scones or as a filling for cakes and pastries. 

It can be found in most grocery stores in tiny expensive jars, that have many ingredients.  

This recipe has only 5 ingredients, is easy to make and very in expensive.

Cook Time 5 minutes
Chill Time 2 hours
Total Time 2 hours 15 minutes

Ingredients

  • 3/4 cup Lemon Juice
  • 1 cup Sugar
  • 1 tbsp Lemon Peel (enough from one lemon)
  • 5 Egg Yolks
  • 8 oz Butter (1 stick)

Instructions

  1. Put Sugar and Peel from one lemon in food processor.
  2. Blend until peel is processed into small pieces.
  3. Put Lemon Sugar and all other ingredients into sauce pan.
  4. Using medium heat, whisk often for 5-8 minutes.
  5. The mixture will come to a rapid boil.  You will see thick sugary bubbles.
  6. Strain Mixture. This will remove any seeds, egg whites and all the lemon peel.
  7. Place into an air tight container. 
  8. Chill at least 1 hour before use or until curd reaches desired consistency.
