Cheese Crackers (Cheez It Like)

Some store brand cheese crackers are made with preservatives and additives.  Not this recipe, only 5 ingredients.

Cheese crackers can be made with a variety of cheeses, such as cheddar, parmesan, or gouda, and are typically seasoned with herbs and spices to enhance the cheese flavor.  

Enjoy your crackers as a snack, with dips, soups, or as a part of a cheese platter. 

I suggest experimenting after you have made this recipe at least once.

Total Time 30 minutes

Ingredients

  • 1 cup Cheese, shredded
  • 1/4 cup Butter, room temperature
  • 1/2 tsp Sea Salt or Seasoning Salt
  • 1 cup All-Purpose Flour
  • 2 - 3 tbsp Ice Water

Instructions

  1. In the bowl of a stand mixer fitted with a paddle attachment, mix cheese, butter, and salt on low speed until combined.
  2. Add the flour, mix on low until crumbly.
  3. Add 2 tablespoons of the water. Check dough by pinching together and see if it stays together and keeps its shape. if not add another tablespoon of water.
  4. Continue mixing for 30 to 4o seconds. Test again, dough should not be crumbly and keep its shape.
  5. Roll out and shape the dough into the final shape you want it to be. (8x8 square, circles, stars, etc.). Or shape dough into a ball.
  6. Wrap in plastic wrap, refrigerate for 30 - 40 minutes to rest the gluten.
  7. After the resting time is complete, let the dough rest 10 minutes on counter.
  8. Preheat oven to 350 degrees F.
  9. Line a baking sheet with parchment paper.
  10. Place the dough between two sheets of parchment paper and roll into desired shape, if you haven't already done so in step 4.
  11. As your are rolling flip the parchment paper every few rolls. Straighten the parchment paper each time.
  12. Score and shape your cracker as you wish.
  13. Bake until the edges are lightly brown, about 9 - 11 minutes. Check for browning at 7 minutes. You may need to rotate the pan.
  14. Remove crackers from sheet tray, to prevent continual cooking.

Notes

  • If you leave them on the baking sheet, they will continue to cook, from the residual heat and become dry.
  • One or two minutes too long in the oven will result in very brown crackers.
