Blueberry Muffins
Blueberry muffins can be enjoyed as a breakfast, brunch or as a snack. Made with fresh or frozen blueberries, which ever you have on hand.
And, no heavy equipment required.
Ingredients
Dry Ingredients
- 3 cups All Purpose Flour
- 1 1/2 cups Sugar
- 1 tsp Salt
- 4tsp Baking Powder
Wet Ingredients
- 2/3 cup Avocado Oil
- 2 Eggs
- 1 1/2 cups Milk
- 2 cups Blueberries (frozen or fresh)
Instructions
- Pre Heat oven to 400F
- In first bowl, combine flour, sugar, salt and baking powder.
- In second bowl, mix together oil, eggs and milk.
- Put blueberries in third bowl.
- Toss the berries in about 2 tablespoons of the dry ingredient mix. Making sure each berry is covered with the flour mix. This will prevent the berries from sinking to the bottom of the muffins.
- Add wet ingredients to dry ingredients and mix until all dry ingredients are wet. No streaks of flour.
- Fold in flour coated blueberries into batter.
- Fill muffin cups to the top (about 1/3 cup).
- Bake 20-25 minutes (fresh blueberries)
- Bake 25-35 minutes (frozen blueberries)
- Muffins are done when a toothpick inserted comes out clean.
Notes
Vegan Options:
- Replace the 2 eggs with 2 flaxseed eggs
- Use coconut or almond milk in place of cow milk.
