Banana Bread

Banana bread is a simple and easy bread made with ripe bananas.

The mashed ripe bananas provide the natural sweetness and moisture. 

You can serve it warm or cold, plain or toasted, with butter or jam, for breakfast or as a snack. 

You may also want to add nuts, chocolate chips or dried fruit.

This recipe makes one 9x2 inch round cake layer or one loaf.

Ingredients

Bowl One:

  • 1 stick Butter, soft
  • 3/4 cup Brown Sugar
  • 2 Eggs

Bowl Two:

  • 1 cup Bananas Mushed, (about 3)
  • 1 tsp Vanilla Extract or Capt. Morgan Rum

Bowl Three:

  • 2 cups All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger, Powder
  • 1/4tsp Nutmeg (optional)
  • 1/2 cup Nuts or Chocolate Chips (optional)

Instructions

    1. Bowl One (large): Using paddle attachment combine butter, sugar and eggs until smooth in color.
    2. Bowl Two: Mix together mashed bananas and liquid flavoring.
    3. Bowl Three: Mix all dry ingredients until even in color.
    4. Add Bowl Two to Bowl One, mix.
    5. Add Bowl Three to mixture in large bowl: Mix until there are no dry spots. Being careful not to over mix.  (You can use a rubber spatula for this) 
    6. Pour mixture into desired pan.
    7. Line pans with parchment paper or lightly oil the pans.
    8. Loaf Pan = Bake at 350F for 40-55 minutes.
    9. One 9” Round Cake Pan = Bake at 350F 20-25 minutes.
    10. Bread is done when a toothpick comes out clean or when pressed in the center there is a little bounce back.

    Notes

    You may need to loosely cover the loaf with a piece of foil to slow down the browning.
