Vegan Carrot Raisin Muffins
Ingredients
Raisin Soak
- 1/2 cup Raisins
- 1/2 cup Apple Juice
Flaxseed Egg
- 1 tbsp Flaxseed, ground
- 2 tbsp Water
Large Bowl
- 1/2 cup Coconut Milk
- 1 tbsp Appple Cider Vinegar
- 1/3 cup Brown Sugar
- 1 tbsp Molasses
- 1/2 cup Water
- 2 tbsp Avocado Oil
- 1 1/2 cup Carrots, shredded
Smaller Bowl
- 3 cups All Purpose Flour
- 1/2 tsp Salt
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Ginger, powder
Instructions
- In a measuring cup or bowl soak raisins in apple juice, for at least 20 minutes.
- Flaxseed Egg = in a small bowl combine flaxseed and water, let sit for about 5 minutes.
- In Large Bowl combine raisins, apple juice, flaxseed egg, coconut milk, apple cider vinegar, brown sugar, molasses, water, avocado oil, carrots.
- Mix until will combined.
- In a smaller bowl combine flour, salt, baking powder, baking soda, cinnamon, powdered ginger.
- Add all smaller bowl ingredients to bowl of wet ingredients in large bowl.
- Mix until until no dry patches of flour.
- Spoon into paper lined muffin pan. About 1/3 cup of batter in each muffin tin.
- Bake at 350F for 25 minutes.
