Mashed Potatoes

Bowl of Mashed potatoes

Mashed Potatoes can be served either smooth or chunky and can be garnished with chives, parsley, butter, cheese, etc.

This is an easy foundational pantry basic recipe, with five standard ingredients.

Ingredients

  • 2 lb Potatoes
  • 1/2 cup Milk
  • 1/2 stick Unsalted Butter, cold in small pieces
  • 1/4 tsp Black Pepper
  • 1 tsp Salt, may need more
  • Enough Water to cover potatoes

Instructions

  1. All ingredients must be at room temperature.
  2. Peel and cut potatoes into one inch cubes.
  3. Put potatoes in a sauce pan. Add enough water to cover.
  4. Boil until a knife or fork can pierce through to the center of one of the potatoes and still keep its shape.
  5. Pour off excess water.  Let pan continue to heat for about one minute to remove excess moisture.
  6. Turn off heat.  Add milk, pepper, salt and butter to hot potatoes.
  7. Using a potato masher or fork, mix all ingredients until smooth.
  8. Taste for flavor.
  9. If your potatoes are a little wet, let them sit for a few minutes 5-20.  (Most restaurants make their mashed potatoes loose.  Because, the moisture will start to evaporate while sitting on the buffet line.)

Notes

  • If your potatoes are really loose, cook them on very low heat until they reach your desired consistency.
  • If your potatoes are really dry, add more milk one table spoon at a time, until desired consistency is reached.
