If you don't have an ice cream machine you can eat the custard as a pudding.

Ingredients

  • 2 cups Almond Milk
  • 1 cup Coconut Milk
  • 4 Egg Yolks
  • 1/2 tsp Xanthum Gum
  • 1/4 tsp Salt
  • 2/3 cup Xylitol (or your sweetener of choice)
  • 1/2 tsp Vanilla Extract (or your extract of choice)

Instructions

    1. Whisk all ingredients together (EXCEPT Extract) in sauce pan. Whisking often, to keep the Almond Milk from settling on the bottom.
    2. Bring custard to a simmer for about 3-5 minutes.
    3. To test for doneness: Dip a spoon into hot custard, remove spoon and run your finger over back of spoon. If the custard stays separated it is done.
    4. Remove custard from heat source and add extract of choice.
    5. Strain custard mixture.
    6. Chill custard in freezer for 2 hours. OR, chill in refrigerator until about 41F (6-8 hours).
    7. The custard will consistency will be like a pudding. At this point you may eat it as is.
    8. Pour the custard into your ice cream machine and follow directions. Pending how cold your machine gets, churning should not take more than 15 minutes.

What is not dairy?

Eggs are not dairy. They come from chickens/birds.
